Grades and Standards for Chicken

Broiler / Fryer - A young and tender chicken about seven weeks old. Weigh between 2 1/2 to 4 1/2 pounds. You can cook this chicken using any method.

Rock Cornish Game Hen - A small broiler-fryer weighs between one and two pounds. This bird is usually stuffed and roasted.

 

Roaster - A chicken between three and five months. The roaster usually weighs between five to seven pounds. The best cooking method to use is roasting.

Capon - The capon is between 16 weeks to eight months old. They weigh between four to seven pounds. The majority of meat is white. The cooking method to cook capon's is roasted.

Stewing / Baking - The age of this bird is between 10 months to 1 1/2 years old. The best cooking method to use is moist cooking such as stewing.

Cock / Rooster - The majority of meat is dark. The cooking method requires long periods of moist cooking.
